Steps to make to make 24 hour calzone

  1. First of all, the Thangzhong. We need to get a lot of milk into this, so we need a way to capture a lot of moisture into a small amount of flour. Cue the Thangzhong.
  2. Add 25 grams of whole grain flour and 125 grams (1:5) into a pan and heat on a low fire (it should Cook at about 66°C).

  8. When done kneading, let it rise for 1 to 1,5 hours.
  9. Then off to the filling. Cut all the vegetables and nuts.
  10. In a large pan, start of with cooking the onion and garlic in some olive oil. After that, add the meat.
  11. When the meat is seared, add the vegetables. Season to taste. After a few minutes, add the nuts, cheese, diced tomatoes and the beans if you are going vegetarian. Let this cook for a few minutes, after which you can turn of the stove.
  12. Back to the dough. Make three balls or if you are really daring, one big ball. Roll one of these balls out on some baking paper, making a circle. Add the filling to one half of the dough and fold over the other end of the dough. Fold in the outer edge of the calzone inwards to seal it. Repeat with the other two dough balls.
  13. Bake the calzone at 200°C for about 20 to 30 minutes or until golden brown.
